17th Century Abbey of Hauvillers cellar master in Epernay, Dom Pierre Perignon is called the father of champagne. As a winemaking visionary, he sought to make the "best wine in the world" and was the first winemaker to master the production of white wine from red grapes. The champagne that bears his name is made from Chardonay and Pinot Noir grapes from the Abbey of Hautvillers' oldest vines and from ten Grand Cru vineyards. Dom Perignon is only produced in exceptional vintage years.
